Mini-burger with mango and radicchio

Ingredients

  • 25 g fresh yeast
  • 20 g Sugar
  • 50 g Butter
  • 250 ml Milk
  • 2 TABLESPOONS Milk
  • 7-10 Tbsp Salt
  • 600 g Flour
  • 1 Egg (Gr. M)
  • 1 Egg yolk (Gr. M)
  • 2 TABLESPOONS Sesame seed
  • 800 g Minced beef
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Oil
  • 2 Mangoes
  • 2 Radicchio Salad
  • 1 bottle(s) (250 ml each) Curry sauce
  • 7-10 Tbsp Flour
  • baking paper
  • 7-10 Tbsp wooden skewers

Directions

    For the hamburger buns, stir yeast with sugar until liquid. Heat butter and 250 ml milk. Add 125 ml water and let it cool down lukewarm. Put 1 tsp. salt, flour and egg in a bowl. Pour in the milk mixture. Add the yeast mixture and immediately knead into an elastic dough with the dough hooks of the hand mixer for 6-8 minutes. Cover and leave to rise in a warm place for about 45 minutes.

    Knead the dough briefly on a floured work surface. Form approx. 24 round dough pieces from the dough and place them on two baking trays lined with baking paper. Cover them and let them rise for another 20 minutes. Whisk the egg yolks with 2 tbsp. milk. Spread the bread rolls with it and sprinkle with sesame seeds. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) one after the other for about 15 minutes. Remove and let cool on a cake rack.

    Season the mince with 2 tsp salt and pepper. Form approx. 24 small meatballs from the mixture. Heat the oil in portions in a large frying pan, fry the meatballs for 4-5 minutes while turning. Drain on kitchen paper. Cut the mango pulp from the stone, peel and cut into thin slices. Wash and clean the radicchio and cut into thin strips.

    Halve the burger buns. Spread the halves with curry sauce, cover with salad, meatballs and mango slices. Place the upper halves of the bun on top. If necessary, pin with wooden skewers.
