Sweet potato salad with fried cheese eaters

Ingredients

  • 750 g Sweet potatoes
  • 3 small apples
  • 2 TABLESPOONS Walnut kernels
  • 6 TABLESPOONS White wine vinegar
  • 1 TEASPOON Vegetable broth
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 1/2 TEASPOON Sambal Oelek
  • 1 Radicchio salad
  • 1/2 Frisée salad
  • 4 Goat cheese thaler (approx. 40 g each)
  • 2 TABLESPOONS Flour
  • 1 Egg
  • 5-6 Tbsp Breadcrumbs
  • 2 TABLESPOONS Oil

Directions

    Wash ##sweet potatoes## and cook covered in water for 20-30 minutes depending on size. Quench, peel and let cool down.

    ##Apples## wash, quarter and core them. Cut 1 apple into slices, dice 2 apples finely. ##Nuts## chop roughly. Roast briefly in a pot without fat. Add vinegar, 150 ml water, broth and about 1/2 teaspoon sugar, bring to the boil.

    Simmer the apples for 2-3 minutes. Season to taste with salt and Sambal Oelek. Cut potatoes into slices. Pour hot marinade over them, mix carefully. Cover and leave to stand for about 30 minutes.

    Leaf salads clean, wash, spin dry and pluck or cut smaller.

    Turn the goat's cheese taler one after the other in flour, whisked egg and breadcrumbs. Press the breadcrumbs lightly. Fry in hot oil for 2-3 minutes until golden brown. Flavour sweet potato salad again.

    Fold in leaf salads and arrange with the cheese ears.
