Wash and slice the cucumber or cut it into fine slices. Clean and wash radicchio. Remove leaves, spin dry and cut into wide strips. Clean and wash spring onions and cut them diagonally into thin rings.
Wash and clean the figs and cut them into slices.
For the dressing, cut the pomegranate in half. Remove the seeds from the skin and place in a bowl. Stir in vinegar and 1 teaspoon honey, fold in oil. Season to taste with salt, pepper and honey.
Mix cucumbers, radicchio, spring onions and figs. Mix in dressing just before serving. Crumble the feta and spread on top.
