Roll out the dough and separate into triangles. Sprinkle 3 pieces with cheese and sesame seeds. Cover remaining croissants with 1 small roll of marzipan each. Sprinkle with pistachios. Roll up the dough loosely from the wide side.
Place on a baking tray lined with baking paper. Brush with whisked egg yolk and sprinkle a little more. Bake in a preheated oven (electric: 200 °C/ gas: level 3) for 12-15 minutes. Tastes delicious, spread with butter.
