Halve the papaya and remove the seeds. Peel the flesh. Cut 1 papaya into pieces. Peel and quarter the pineapple and cut out the woody core. Cut the flesh into pieces. Peel, halve and slice the kiwi. Peel and slice the banana.
Sprinkle fruits with lemon juice and sprinkle with sugar. Roast almond flakes in a pan without fat until golden brown, take them out. Beat cream, rum and vanilla sugar until semi-stiff. Spread fruit salad in the papaya halves. Place a blob of rum-cream on each half and sprinkle with almond flakes. Decorate with slices of carambola
