Defrost the berries. Mix the pudding powder, 1 tablespoon of sugar and some cherry nectar. Bring the remaining cherry nectar to the boil, remove from the heat and add the pudding powder while stirring.
Bring to the boil again briefly. Add the berries, let cool down and divide into 4 plates. In the meantime, mix quark, cinnamon and remaining sugar. Beat the egg whites until stiff and fold into the quark.
Form 8 dumplings with 2 moistened tablespoons one after the other and place 2 of each in a cold dish. Serve decorated with lemon balm.
