Wash and clean the strawberries, halve or quarter them depending on size. Halve melon and remove seeds. Use a ball cutter to cut out different sized balls or cut and dice the flesh from the skin. Mix the fruits. Sprinkle with sugar and sprinkle with Chantré Rouge.
Leave to stand for about 1 hour. Wash the limes hot and cut into thin slices. Pour the fruit with marinade and lime slices into a punch bowl, fill up with well chilled wine, mineral water and, just before serving, with sparkling wine. Decorate as desired with lemon balm
