  • 1 kg Potatoes
  • 1 Onion
  • 2 Garlic cloves
  • 1 TABLESPOON Olive oil
  • 1 can(s) (850 ml) Tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cayenne pepper
  • 7-10 Tbsp Precious sweet paprika powder
  • 1 TEASPOON Sugar
  • 1 TABLESPOON Wine vinegar
  • 200 g red pepper
  • 150 g pitted green olives
  • 8 Stem(s) Thyme
  • 3 Eggs (size M)
  • 5 TABLESPOONS Milk
  • 150 g Schmand
  • 75 g grated gouda cheese
  • 7-10 Tbsp Pepper
  • 8 discs Serrano ham
  • 7-10 Tbsp Grease

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. For the tomato sauce, peel and finely dice the onion and 1 clove of garlic. Heat the oil and stir-fry the onion and garlic for about 3 minutes until transparent. Add the tomatoes and take the pot off the heat. Chop finely with a hand blender. Season to taste with salt, cayenne pepper, paprika powder, sugar and wine vinegar.

    Put the sauce in a cool place. Clean, wash and finely dice the peppers. Cut olives into slices. Rinse potatoes under cold water, drain and peel. Cut potatoes into slices. Wash thyme, shake dry, pluck off leaves. Peel the remaining garlic and dice finely. Whisk eggs, milk, sour cream, cheese, thyme, except for something to sprinkle, and garlic. Season with salt and pepper. Mix potato slices, diced peppers, olive slices and egg mixture and place in a greased pizza tray (approx. 31 cm Ø). Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 40 minutes. Take the finished omelette out of the oven, let it rest for a short time and cut into cake pieces.

    Whisk eggs, milk, sour cream, cheese, thyme, except for something to sprinkle, and garlic. Season with salt and pepper. Mix potato slices, diced peppers, olive slices and egg mixture and place in a greased pizza tray (approx. 31 cm Ø). Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 40 minutes. Take the finished omelette out of the oven, let it rest for a short time and cut into cake pieces. Arrange omelette, sauce and ham on plates. Sprinkle with thyme. Olives taste good with it
