Defrost the prawns. Roast nuts in a pan without fat. Remove, cool and chop.
Halve melon, remove seeds and cut into slices. Cut the flesh from the skin and dice. Clean, wash and shake dry the rocket.
Wash the shrimps and pat them dry. Heat 1-2 tablespoons of oil in a frying pan. Fry the prawns for about 5 minutes, turning them over. Season with salt and pepper. Let cool down a little.
Mix lemon juice, salt, pepper and 1 pinch of sugar. Fold in 2 tablespoons of oil (possibly nut oil). Mix rocket, nuts, melon, shrimps and marinade. Season with salt and pepper. Delicious with baguette.
