Salmon ceviche with avocado

Ingredients

  • 1 Organic Lime
  • 300 g very fresh salmon fillet (sushi quality)
  • 4-5 Stem(s) Coriander
  • 1 red chilli pepper
  • 2 TABLESPOONS good olive oil
  • 7-10 Tbsp Salt
  • 1 Avocado

Directions

    Rinse lime with hot water, dab dry and finely grate the peel. Halve the lime and squeeze it. Rinse salmon cold, dab dry and cut into short strips.

    Wash coriander, shake dry, pluck leaves from the stems and chop. Clean the chilli, cut lengthwise, remove seeds, wash and cut into fine rings.

    Mix salmon, coriander, chilli, oil, lime peel and juice. Season to taste with salt. Remove the stone from the avocado, remove the flesh from the skin and dice. Fold into the fish. Salmon ceviche for example
