For the green olives, wash the orange. Finely grate the skin. Wash the herbs and remove the leaves. Mix everything with the green olives and 2-3 tablespoons of oil. Leave to stand for at least 30 minutes.
For the black olives, peel the garlic and chop very finely. Clean, seed, wash and finely chop the chilli. Mix everything with the black olives and 2-3 tablespoons of oil. Let it stand for at least 30 minutes.
