Ingredients

  • 150 g Mimolette (Dutch hard cheese)
  • 150 ml Milk
  • 1 pinch ground pimento
  • 90 g Butter or margarine
  • 1 pinch Salt
  • 150 g Flour
  • 4 Eggs (size M)
  • 1 Egg Yolk
  • 7-10 Tbsp Caraway seed
  • baking paper

Directions

    Grate cheese. Bring 100 ml water, milk, allspice, fat and salt to the boil in a saucepan. Add flour at once. Turn off the hot plate and stir the mixture until it comes off the bottom of the pot as a lump. Put the dough into a bowl and stir in 1 egg. Let it cool down for about 5 minutes. Stir in 3 eggs and 3/4 of the cheese one after the other

    Pour the mixture into a piping bag with a medium-sized punched spout. Spray on 2 baking trays Eclairs (approx. 7 cm long) lined with baking paper. Mix the egg yolk and 3 tbsp. water. Brush the eclairs with the mixture and sprinkle with the remaining cheese and caraway

    Bake in the preheated oven (electric oven: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for 15-20 minutes. Take out and let cool down
