Mini Mimolette Lightning

Ingredients

  • 7-10 Tbsp Pour 4/6 pers
  • 7-10 Tbsp 4 whole eggs + 1 yolk (golden brown)
  • 150 g de farine
  • 15 cl de lait
  • 10 cl d'eau
  • 90 g of butter + for the plate
  • 150 g de mimolette vieille
  • 1 salt pinch

Directions

    1 Preheat the oven to 180 °C (th 6). Grate the mimolette. Pour the milk and water into a saucepan, add the chopped butter and salt. Bring to the boil, stir in the butter and salt.

    2 Remove from the heat and pour in the flour at once, while stirring. Return the pan to the heat and dry the dough, stirring vigorously, until it no longer sticks to the sides.

    3 Put the dough in a bowl and add the whole eggs one by one, then add the ¾ of the mimolette. Using a piping bag, form mini eclairs on the baking sheet covered with buttered baking paper.

    4 Dilute the yolk in a little water and brush the lightning bolts with it. Sprinkle the rest of the mimolette and bake for 20 minutes. Open the oven door to dry them and let cool on a rack.

    5 Before cooking, you can sprinkle lightning bolts with cumin seeds, add a little chilli pepper to the dough .
