Scampi and tomato skewers

Ingredients

Servings: 4
  • 2 Limes (approx. 75 g each)
  • 12 cooked prawns ready for cooking (à approx. 10 g)
  • 1 small onion
  • 1 Garlic clove
  • 2-3 TABLESPOONS Breadcrumbs
  • 150 g mixed minced meat
  • 1 Egg Yolk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp colourful pepper
  • 8 yellow cherry tomatoes (approx. 15 g each)
  • 1/2 package (60 g) small mozzarella beads
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp Basil leaves
  • 8 long wooden skewers

Directions

    Wash the limes, rub dry and cut into slices. Wash the shrimps, dab dry and skewer them alternately with the limes on wooden skewers. Peel onion and garlic and chop finely.

    Place in a bowl together with breadcrumbs, minced meat and egg yolk. Season with salt and pepper and knead. Clean, wash and dry the tomatoes and cut a thin slice off each as a lid.

    Drain the mozzarella. Shape meatballs and skewer them alternately with the tomatoes and mozzarella balls on wooden skewers. Sprinkle all skewers with oil and season with salt and pepper. Put them on a grill and grill all around for 6-8 minutes.

    Season again and arrange on a plate. Garnish with basil and serve.
