Marinated spare ribs with coleslaw

Ingredients

  • 2 kg Spareribs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 2 Garlic cloves
  • 125 ml Soy sauce
  • 75 ml Orange juice
  • 3 TABLESPOONS Honey
  • 3 Spring onions
  • 1 red pepper
  • 600 g Coleslaw (chiller cabinet)
  • 3 TABLESPOONS Fresh cream

Directions

    Wash the meat, dab dry and season with salt and pepper. Peel onion and garlic and chop finely. In a pot, mix soy sauce, orange juice and honey, add onion and garlic and bring to the boil. Put spare ribs in a bowl, mix with the sauce and marinate for about 1 hour. Turn several times in between

    Remove the meat from the marinade, place it in the fat pan of the oven, brush it again with the marinade and cook in the preheated oven (electric cooker: 125 °C/ convection oven: 100 °C/ gas: unsuitable) for 2-3 hours. Coat several times with the marinade and turn

    Wash and clean spring onions and cut into fine rings. Quarter the bell pepper, clean, wash and cut into fine strips. Drain coleslaw. Mix spring onions, paprika and coleslaw, fold in crème fraîche and season to taste with salt and pepper

    Turn up the oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) and grill the meat for approx. 10 minutes until crispy brown, turning once. Arrange ribs with coleslaw on plates. Serve with ciabatta or baguette bread
