Quark stollen with baked fruit

Ingredients

  • 1 pack of (250 g)
  • 7-10 Tbsp mixed fried fruit
  • 500 g Flour
  • 1 package Baking Powder
  • 2 Eggs (size M)
  • 1 pinch Salt
  • 1/2 TEASPOON Cinnamon
  • 1 knife tip Cardamom
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 150 g Sugar
  • 1 package Vanillin sugar
  • 200 g Butter or margarine
  • 250 g Low-fat curd
  • 50 g chopped almonds
  • 7-10 Tbsp Grease
  • 2-3 TABLESPOONS Icing sugar for the
  • 7-10 Tbsp Dusting

Directions

    Cut the baked fruit into fine cubes. Mix flour and baking powder in a mixing bowl. Press a depression in the middle. Add eggs, salt, cinnamon, cardamom, lemon peel, sugar and vanilla sugar and mix with part of the flour to a thick paste.

    Spread 150 g of fat in pieces on top. Add curd cheese, baked fruit and almonds and knead everything into a dough. Form a stollen of 25-30 cm length and put it on a greased baking tray. (The sides of the stollen can be supported with 2 box moulds so that the stollen keeps its shape).

    Bake in the preheated oven (electric: 175 °C/ gas: level 2) for 60-80 minutes. Cover if necessary in between. Melt the remaining fat and spread the hot stollen with the fat. Dust thickly with icing sugar.

    Results in about 25 slices.
