Mix honey, mustard and oil. Cut 3 thin slices from the zucchini lengthwise. Use the rest of the zucchini for other purposes. Blanch the zucchini slices in boiling salted water for about 2 minutes.
Take out and drain on kitchen paper. Wrap zucchini slices around the poultry sausages. Grill the sausages on the preheated grill for 8-10 minutes while turning. Spread half of the honey marinade on the sausages 2-3 minutes before the end of the cooking time.
Add half the salsa.
