Grilled neck cutlet roast with honey and beer paste

Ingredients

Servings: 6
  • 2 kg Pork neck cutlet roast (let the butcher remove it from the bone, but have it delivered with the meat)
  • 50 g liquid honey
  • 150 ml Beer (Pils)
  • 6-7 TABLESPOONS Oil
  • 25 g Tomato paste
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Salt
  • 2 TEASPOONS Sweet peppers
  • 1 red, green and yellow peppers (approx. 225 g each)
  • 100 g Breakfast bacon in cubes
  • 1.2 kg Coleslaw (housewife style)
  • 7-10 Tbsp Parsley

Directions

    Wash the roast and pat dry. For the marinade, mix honey, beer, 4 tbsp. oil, tomato paste, 1 tsp. pepper, 2 tsp. salt and paprika.

    Place the meat in a mould, pour the marinade over it and rub the roast with your hands. Marinate the meat for about 1 hour. Turn after approx. 30 minutes. Place the meat on the bone on a grill rack and grill indirectly covered for about 2 hours. (Alternatively, place on a fat pan and roast in a preheated oven [electric range: 175 °C/ convection oven: 150 °C/ gas: level 2] for approx. 1 3/4 hours). In the meantime, clean, wash and cut the peppers into strips. Finely dice the bacon and leave it in a pan without fat, remove it. Put 2-3 tablespoons of oil into the pan, heat it up, add paprika and fry it while turning for 4-5 minutes at medium heat. Season with salt and pepper. Remove from the pan and let it cool down. Mix coleslaw, bacon and paprika.
