Wash the potatoes and boil in water for about 20 minutes. Quench, peel and let cool
Whisk eggs and milk. Season with salt and pepper. Clean and wash spring onions and cut into rings. Cut potatoes into slices
Heat the oil in a coated pan with lid (approx. 22 cm Ø). Fry the potatoes for about 5 minutes while turning. Sauté spring onions, except for 1 tbsp. for sprinkling, briefly. Pour egg milk over it. Cover and allow to set for 10-15 minutes over a low heat.
Carefully turn the tortilla, fry for another 5 minutes. Take out. Steam any remaining spring onions briefly in the frying fat. Sprinkle the tortilla with it and serve with turkey breast. Served with: tomato salad without oil
