Potato-Casseler-Gröstl with mustard sauce

Ingredients

Servings: 4
  • 600 g new potatoes
  • 1 Courgette
  • 100 g cherry tomatoes
  • 2 Onions
  • 6 Stem/s Parsley
  • 400 g detached pork chop
  • 3 TABLESPOONS Oil
  • 1/2 TEASPOON Vegetable broth (instant)
  • 150 g Schmand
  • 2 TABLESPOONS grainy mustard
  • 7-10 Tbsp salt, pepper

Directions

    Wash the potatoes and cook with the skin in boiling water for about 20 minutes. Drain and cut into large pieces.

    Clean, wash and slice the zucchini. Wash and halve the tomatoes. Peel and finely dice onions. Wash parsley and shake dry, pluck and chop. Dice smoked pork loin.

    Heat 1 tablespoon of oil in a saucepan, sauté half the onions in it. Deglaze with 125 ml water, stir in broth and bring to the boil. Stir in sour cream. Bring sauce to the boil and simmer briefly. Stir in mustard, season with salt and pepper.

    Heat 2 tablespoons of oil in a frying pan. Sauté the smoked pork loin for approx. 5 minutes, turning it over and taking it out. Fry the potatoes in the pan for about 10 minutes while turning.

    Approximately 3 minutes before the end of the frying time, add the courgettes and remaining onions. Fold in the smoked pork loin, tomatoes and parsley, warm up briefly. Season to taste with salt and pepper. Serve with mustard sauce.
