Potato and vegetable salad

  • 1 kg Potatoes
  • 1 (approx. 1 kg) Cauliflower
  • 2 cubes (10 g each) Basil and thyme
  • 1 medium onion
  • 1/2 (approx. 100 g) Sweet pepper
  • 3 Vienna sausage (approx. 90 g each)
  • 3-4 Tbsp Herb Vinegar
  • 4-5 Tbsp Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 bunch Parsley
  • 7-10 Tbsp Basil

Directions

    Peel and wash the potatoes and cut into large cubes. Put them into a pot and add as much water as necessary until the potatoes are covered. Bring to the boil. In the meantime, clean and wash the cauliflower and cut it into florets. Add the herbs to the potatoes and let them dissolve while stirring.

    Cook the potatoes for about 15 minutes. Add cauliflower 10 minutes before the end of the cooking time and cook. In the meantime, peel and finely dice the onion. Clean, wash and dice the peppers. Slice the sausages. Drain the potato and cauliflower vegetables on a sieve. Collect the herb broth and measure 100 ml. Mix stock and vinegar. Add oil and season with salt and pepper. Wash parsley, dab dry, pluck leaves from the stalks and chop finely.

Add to the marinade. Mix all salad ingredients with the marinade. Arrange on a plate and serve garnished with basil as desired
