Paprika-rice salad

Ingredients

  • 200 g Natural or long grain rice
  • 7-10 Tbsp Salt
  • 1 glass (370 ml) Celery salad
  • 2 red onions
  • 2 large gherkins (from the jar)
  • 2 red peppers
  • 200 g Pork sausage
  • 4-5 Tbsp Tomato juice
  • 1 TABLESPOON Tomato paste
  • 2-3 TABLESPOONS Gherkin stock
  • 1 pinch Sugar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Tabasco
  • 4 TABLESPOONS Salad Mayonnaise
  • 150 g Skimmed milk yoghurt
  • 7-10 Tbsp Parsley

    Cover the rice and let it swell in plenty of boiling salted water at low heat for about 30 minutes (normal long grain rice about 20 minutes). Drain the celery. Peel onions and cut into rings.

    Cut the gherkins into slices. Clean, wash and cut the bell peppers into strips. Peel the skin off the sausage and cut the sausage into strips. Quench rice cold and let it drain. Mix the prepared ingredients.

    Mix tomato juice, tomato paste, gherkin stock and sugar. Season to taste with salt, pepper and some Tabasco. Fold into the salad and leave to stand for at least 1 hour. Mix mayonnaise and yoghurt and fold into the salad.

    Serve garnished with parsley.
