Mix starch and 4 tablespoons of water until smooth. Bring nectar and sugar to the boil. Stir in the starch and simmer for about 1 minute. Let it cool down, stirring several times
Mix the passion fruit pudding and yoghurt until smooth. Whip the cream until stiff and allow the vanillin sugar to trickle in. Fold into the passion fruit yoghurt mixture. Pour into four dessert glasses. Chill for about 1 hour.
Meanwhile cut the passion fruit in half. Remove the jelly-like pulp together with the seeds with a spoon. Spread over the cream. Decorate with lemon balm if desired.
