Red Grape Semolina Flummery

Ingredients

Servings: 4
  • 3/4 l red grape juice
  • 2-3 go. tablespoons of sugar
  • 7-10 Tbsp rubbed off. peel and 2-3 tablespoons juice of 1 untreated lemon
  • 90 g Semolina
  • 8-10 Walnut kernel halves
  • 120 g Grapes (e.g. blue and green)
  • 150 g Whole milk yoghurt
  • 7-10 Tbsp Lemon balm

Directions

    Boil up grape juice, sugar, lemon peel, except for something to decorate, and juice. Stir in semolina. Bring to the boil again and simmer at low heat stirring for 3-4 minutes. Cool down a little. Pour into 4 bowls and let cool off. Cool down

    Roughly chop the nuts. Wash, halve and core the grapes

    Stir the yoghurt until smooth and place a blob on each semolina. Spread the grapes on top. Sprinkle with nuts and remaining lemon peel. Decorate with lemon balm if desired.

    This semolina flummery without milk is also a delicious dessert for lactose intolerance. Then replace the yoghurt with vanilla sauce or soy-based yoghurt

    Soft wheat semolina is ideal for delicate desserts. If you only have durum wheat semolina in stock; this will also work - the desserts will just be a bit more "hearty".
