Paprika packet with basil vinaigrette

Ingredients

Servings: 4
  • 4 colourful peppers
  • 200 g Feta light (50% less fat)
  • 1 Pot of thyme
  • 4-5 Tbsp Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Pot of basil
  • 6 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp fresh herbs
  • 2 packets (20 g each) Grissini sticks (ital. snacks)

Directions

    Remove the skin of the peppers thinly with a peeler. Quarter the peppers lengthwise and clean them. Cook in boiling water for about 10 minutes. Cut cheese into sticks. Wash the thyme and cut into pieces of about 5 cm.

    Wrap the pieces of paprika with 1 piece of feta cheese and some thyme and pin them. Fry briefly in 1-2 tablespoons of hot olive oil. Season with salt and pepper. For the vinaigrette, wash the basil, pluck the leaves and cut them into strips if necessary.

    Mix vinegar, 3 tablespoons olive oil and basil. Season with salt, pepper and sugar. Sprinkle the vinaigrette over the pepper rolls in portions and serve. Serve garnished with fresh herbs.
