Ingredients

Servings: 10
  • 1 collar Soup greens (approx. 750 g)
  • 400 g Potatoes
  • 2 medium-sized onions
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Pepper
  • 500 g dried yellow peas
  • 500 g Ham bones
  • 2 Bay leaves
  • 500 g Pork sausage
  • 1 collar Parsley
  • 7-10 Tbsp Salt
  • 125 g ready roasted onions

Directions

    Clean or peel, wash and chop the soup greens. Peel, wash and dice the potatoes. Peel and chop onions. Heat the oil in a large pot. Brown onions, soup vegetables and potatoes in it, season with pepper. Rinse peas and add. Add ham bones and bay leaf. Pour on about 3 l water. Bring to the boil, cover and simmer at low heat 1 1⁄2-1 3⁄4 for hours. Stir the soup from time to time.

    Remove the sausage from the skin and cut into very thin slices. Wash and chop the parsley. Remove bones and laurel from the soup. Season soup with salt and pepper. Serve with sausage, parsley and fried onions.

    If you can't get a ham bone from your butcher, simply buy 300 g of smoked streaky bacon in one piece, dice it and add it to the soup after cooking.
