Ingredients

Servings: 4
  • 1 medium onion
  • 2 Garlic cloves
  • 1 kg floury potatoes
  • 2 TABLESPOONS Rapeseed oil
  • 400 g mixed minced meat
  • 1 TABLESPOON Tomato paste
  • 1 can(s) (à 850 ml) chunky tomatoes
  • 500 ml Vegetable broth
  • 1 TABLESPOON Oregano
  • 4 medium-sized carrots
  • 1 rod/s Leeks
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Sweet peppers
  • 1 TEASPOON Sugar
  • 3 Stem/s Parsley

Directions

    Peel and finely chop the onion. Peel garlic and chop finely. Peel and wash potatoes and cut into bite-sized cubes. Heat the oil in a large pot and fry the minced meat in it until crumbly. Add onion cubes, garlic, potatoes and tomato paste to the pot and fry for about 3 minutes. Add tomatoes and stock, add oregano and simmer at medium heat for about 15 minutes.

    Carrots, peel and slice. Leek, clean, wash, dab dry and cut into fine rings. After about 15 minutes cooking time add carrot slices and cook for another 10 minutes. Add leek slices and simmer for another 10 minutes. Season stew with salt, pepper, paprika powder and sugar.

    Wash the parsley and dab dry. Pluck the leaves from the stalks and chop finely. Sprinkle stew with parsley and serve.
