Braised chorizo beans

Ingredients

Servings: 4
  • 300 g Swiss chard
  • 1 can(s) (à 850 ml) white beans with soup greens
  • 1 can(s) (425 ml each) chunky tomatoes
  • 4 Chorizo (about 220 g)
  • 6 Stem/s Herbs (e.g. thyme, oregano or parsley)
  • 1 Onion
  • 2 Garlic cloves
  • 2 TABLESPOONS Oil
  • 1 TEASPOON Vegetable broth (instant)
  • 1 Bay leaf
  • 2 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp salt, pepper

Directions

    Clean, wash and cut the chard into strips. Drain the beans in a sieve. Peel onion and garlic, chop finely and fry in 1 tbsp. hot oil. Add tomatoes, 1⁄4 l water, broth and bay leaf, bring to the boil. Add beans and chard, simmer for about 5 minutes. Season to taste with vinegar, salt and pepper.

    Fry the chorizo in 1 tablespoon of hot oil all around for about 5 minutes. Wash the herbs and chop roughly. Add the chorizo to the beans and sprinkle with herbs. Roast bread tastes good with it.
