Peel or clean and wash carrots, potatoes and onions. Cut everything into small pieces. Clean, wash and seed the chillies. Heat the oil in a pot and fry the prepared ingredients for about 5 minutes. Add 1 l stock and orange juice. Stir in Ajvar. Simmer covered for about 20 minutes until soft.
Finely puree the vegetable soup with a hand blender, if necessary add some stock to the soup until the desired consistency is achieved. Season soup with salt and pepper. Wash the chives, shake dry and cut into small rolls. Sprinkle the parmesan shavings and a little pepper on the soup.
