Noodles with hard wheat semolina

Ingredients

Servings: 4
  • 225 g Flour
  • 75 g Durum wheat semolina
  • 1 pinch Salt
  • 5 TABLESPOONS Oil
  • 1 egg (size M)
  • 1 Egg Yolk
  • 7-10 Tbsp Flour

Directions

    Mix flour, semolina and salt in a bowl. Make a depression in the middle and add oil and 4-5 tablespoons of lukewarm water. Knead everything together a little. Add the egg and egg yolk, fold in and knead the dough vigorously with your hands on a lightly floured work surface. Roll out the dough very thinly with a rolling pin and cut it into 1/2 cm wide strips, or turn it through a pasta machine. Cook the noodles in plenty of boiling salted water for 2-4 minutes
