Ingredients

  • 500 g Mussel pasta (e.g. Conchiglie Rigate)
  • 2 Cucumbers
  • 2 red onions
  • 2 Garlic cloves
  • 2 Mini Roman salads
  • 6 TABLESPOONS Olive oil
  • 8 TABLESPOONS Balsamic vinegar bianco or white wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 500 g Shrimps (without head and shell)
  • 150 g Fresh cream
  • 8 TABLESPOONS Milk
  • 1 TABLESPOON Lemon juice
  • 100 g cherry tomatoes
  • 4 Stem(s) Basil

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash and clean the cucumbers, quarter them lengthwise and cut them into slices. Peel onions and cut into thin rings.

    Peel and finely chop the garlic. Drain the pasta and rinse with cold water. For the vinaigrette, mix 5 tablespoons of oil, 7 tablespoons of vinegar and 5 tablespoons of water and season to taste with salt, pepper and sugar.

    Mix the pasta with the vinaigrette and let it soak through. Remove the intestines from the prawns. Wash the prawns, dab dry. Heat 1 tablespoon of oil in a frying pan. Fry the prawns for about 3 minutes on both sides.

    Season with salt and pepper. Add chopped garlic and toss in the pan. Remove the prawns and set aside. For the dressing pour the roast stock through a sieve. Mix the roast stock, crème fraîche, milk, 1 tablespoon vinegar and lemon juice and season with salt and pepper.

    Wash the tomatoes, dab dry and cut in half. Mix tomatoes, cucumber, onions, shrimps and noodles. Wash basil and dab dry. Put 1 stalk aside. Remove remaining leaves and cut into strips.

    Wash, halve and cut the romaine lettuce into strips. Shortly before serving, fold the romaine lettuce, basil and dressing into the pasta salad. Season salad again and garnish with basil.
