Mirabelle jam with vanilla

When the mirabelle plums are ripe in late summer, it is time to make jam. Our favourite recipe? Mirabelle plum jam with vanilla!

  • 1.2 kg Mirabelle plums
  • 7-10 Tbsp pulp from 2 vanilla beans
  • 1 package (5 g) Citric acid
  • 1 kg Gelling sugar (1:1)

    Wash and stone the yellow plums. Weigh 1000 grams of fruit. Mix the mirabelles, vanilla pulp, citric acid and jam sugar in a large pot. Bring to the boil while stirring over high heat. Then boil for at least 4 minutes while stirring continuously. Immediately fill into prepared glasses and close them. Shelf life: 9-12 months.
