Minced steak on roasted leek pieces and herb yoghurt

Ingredients

  • 250 g Leeks (leek)
  • 1 Tomato
  • 1 1/2 TSP. Oil
  • 50 ml Vegetable broth (instant)
  • 1 (approx. 50 g) Onion
  • 125 g Beefsteak minced meat
  • 25 g Low-fat curd
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • some stem(s) Parsley and chives
  • 125 g Skimmed milk yoghurt

Directions

    Clean, wash and cut the leek into rings. Wash, clean and quarter the tomato and remove the seeds. Cut the flesh into cubes. Heat 1 teaspoon of oil in a pan. Fry the leek in it while turning.

    Add stock and cook covered for about 10 minutes. Peel onion and grate to mince. Add curd and knead. Season with salt and pepper. Form a steak. Spread the grill pan with 1/2 teaspoon of oil.

    Fry the minced steak over medium heat for about 10 minutes, turning once. Wash the herbs and shake dry. Chop the parsley, except for a little bit for garnishing. Cut chives into small rolls.

    Mix yoghurt, season to taste with salt and pepper, fold in herbs. Add the tomato to the leek and warm up briefly. Season to taste with salt and pepper. Arrange vegetables and minced steak on a plate. Add some yoghurt.

    Garnish with parsley. Add the rest of the yoghurt.
