BASIC RECIPE PIZZA DOUGH FOR 6-8 PEOPLE.
Mix 1 cube (42 g) fresh yeast and 1 tablespoon sugar until the yeast is liquid. Put 1 kg flour, 1 teaspoon salt and 6 tablespoons olive oil in a very large bowl. Add yeast and about 550 ml lukewarm water.
Knead with the dough hooks of the hand mixer to a smooth dough. Cover in a warm place for at least 45 minutes.
until the volume has increased. Quarter the dough.
Peel and chop the garlic and onion. Sauté garlic in 1 tbsp. hot oil. Add spinach and about 75 ml water, bring to the boil. Cover and defrost over low heat for about 10 minutes. Season spinach. Drain well.
Heat 2 tablespoons of oil in a large frying pan. Fry the minced meat until crumbly. Add onion and oregano, fry briefly. Add tomato paste and fry. Add 5 tablespoons of water, bring to the boil. Season with salt and pepper.
Stew the minced meat mass for about 5 minutes.
Chop mozzarella, grate gouda. Roll out the pizza dough rectangularly (approx. 35 x 40 cm) on a piece of baking paper dusted with a little flour. Spread the strained tomatoes on top. Spread minced meat and spinach on top.
Sprinkle with cheese. Bake in a hot oven (electric cooker: 225 °C/circulating air: 200 °C/gas: level 4) for 15-20 minutes.
