Gyrospizza with tzatziki

Ingredients

Servings: 8
  • 1⁄2 Cubes (21 g) Yeast
  • 400 g + some flour
  • 7-10 Tbsp sugar, salt, dried marjoram, sweet paprika
  • 7-10 Tbsp Pepper
  • 11 TABLESPOONS Olive oil
  • 600 g Pork escalope
  • 3 red onions
  • 1 big red pepper
  • 4 Tomatoes
  • 100 g Parmesan (piece)
  • 300 g Feta
  • 10 Stem(s) Thyme
  • 1 can(s) (425 ml) piquant pizza sauce
  • 125 g black olives (with stone)
  • 2 Garlic cloves
  • 500 g Greek cream yoghurt
  • 250 g Cucumber
  • 1 Avocado
  • 1 TABLESPOON Lemon juice

Directions

    Crumble yeast in 225 ml lukewarm water and dissolve in it while stirring. Mix 400 g flour, 1 tsp sugar and 1⁄2 tsp salt in a large mixing bowl. Add yeast water and 4 tbsp. oil and knead to a smooth dough using the dough hooks of the mixer.

    Cover and leave to rise in a warm place for about 45 minutes.

    In the meantime dab the escalopes dry and cut them into fine strips. Peel and halve onions and cut into thin strips. Mix meat, onions, 1 tbsp marjoram, 1 1⁄2 tbsp paprika, 1 tsp salt, 1⁄2 tsp pepper and 7 tbsp oil well.

    Clean, wash and cut the peppers into strips. Wash the tomatoes and cut them into slices. Grate parmesan finely. Crumble feta coarsely. Wash thyme, shake dry and remove the leaves from the stems.

    Heat a large pan. Fry the meat in it in portions while turning.

    Line two baking trays with baking paper. Halve the dough. Knead well with your hands on a floured work surface and roll out oval (approx. 24 x 34 cm). Put them on the baking trays and put them in a warm place again.

    Let it go for 15 minutes.

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: see manufacturer). Spread half of the pizza sauce on a dough cake. Cover with half of the meat, peppers, tomatoes and olives. Sprinkle with half each of thyme, parmesan and feta.

    Bake in the hot oven on the lower shelf for about 20 minutes.

    For the tzatziki, peel garlic, chop very finely and mix with yoghurt. Wash cucumber, grate coarsely and stir in. Season to taste with salt and pepper. Halve the avocado, remove the core, then remove the flesh and cut into thin slices.

    Sprinkle with lemon juice.

    Cover the other pastry with the same ingredients as the 1st pizza. Remove the 1st pizza from the oven and bake the 2nd pizza at the same temperature. Cover each pizza with half of the avocado.

    Pass the tzatziki.
