Halve and seed the Charentais and Galia melons. Cut off a thick slice from the Charentai melon and put it aside. Cut out balls of different sizes from the rest. Also cut off a thick slice of watermelon, remove the crust from the rest and cut into triangles. Arrange the melon slices, balls and triangles together with the salami on a plate.
Mix oil and lemon juice and season with salt, pepper and sugar. Pour over the salad. Slice the cheese finely and sprinkle generously over the salad. Serve garnished with red pepper and lemon balm
