Melon cocktail with cider cream

Ingredients

Servings: 4
  • 1 small Galia melon
  • 3 sheets white gelatine
  • 2 Eggs
  • 40 g Sugar
  • 1 package Vanillin sugar
  • 4 TABLESPOONS tart cider (apple wine)
  • 1 TABLESPOON Lemon juice
  • 7-10 Tbsp Melissa

Directions

    Cut the melon in half, remove the seeds and remove the flesh with a ball cutter. Pour melon balls into 4 glasses. Put 4 balls aside for the garnish. Soak gelatine in cold water.

    Separate eggs. Beat the egg yolks, sugar and vanillin sugar until fluffy. Add cider and lemon juice and mix. Squeeze the gelatine and dissolve over low heat. Mix into the cider cream and allow to set slightly in the fridge.

    Beat the egg whites until stiff and fold into the cream. Immediately fold the cream into the melon balls and allow to set. Decorate with the set aside balls and lemon balm.
