Cut the mango meat from the stone. Cut off 8 columns for garnishing. Peel and chop the remaining flesh. Peel papaya and remove seeds. Just before serving, pour the pulp, lemon juice and buttermilk into a tall container and puree. Pour the shake into glasses and sprinkle each with 1 teaspoon of maple syrup. Decorate with mint and mango wedge. (Serve the drink immediately, after about 30 minutes it becomes bitter due to the papaya)
