Banana pancakes with maple syrup and almonds

Ingredients

  • 30 g Butter or margarine
  • 150 g Flour
  • 1 TEASPOON Baking Powder
  • 1 package Vanillin sugar
  • 1 egg (size M)
  • 175 ml Buttermilk
  • 3 small bananas
  • 30 g clarified butter
  • 3 TABLESPOONS flaked almonds
  • 4 TABLESPOONS Maple syrup

Directions

    Melt the fat. Mix flour, baking powder, vanillin sugar, egg and buttermilk until smooth. Stir in fat and let it swell for about 10 minutes. Peel and slice 2 bananas.

    Heat the clarified butter in portions in a pan. For 3 pancakes (each approx. 10 cm Ø), add 2 tbsp. of batter each to the pan. Spread some banana slices and almond flakes on top. Fry the pancakes for about 2 minutes on each side.

    Bake 9 more pancakes in the same way. Peel the rest of the banana and cut it into slices. Arrange the pancakes and banana slices on plates. Drizzle with maple syrup.
