Lamb's lettuce with potato croutons

Ingredients

Servings: 1
  • 600 g large potatoes
  • 3-4 Tbsp Pumpkin seeds
  • 8 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 big onion
  • 6-8 TABLESPOONS white
  • 7-10 Tbsp Balsamic vinegar
  • 300 g Lamb's lettuce
  • 3-4 (approx. 400 g) Carrots
  • 4 TABLESPOONS Pumpkin seed oil

Directions

    ##Peel, wash and finely dice the potatoes##. Roast the seeds in a pan without fat, remove. Fry potatoes in 3 tbsp. hot oil at medium heat for about 10 minutes until crispy. Season with salt and pepper. Take out and let cool down

    ##peel and finely dice onion##. Mix with vinegar, salt, pepper and some sugar. Fold in 5 tablespoons of oil. Clean or peel and wash the salad and ##carrots##. Coarsely grate carrots, mix with lamb's lettuce, seeds and marinade. Arrange everything and sprinkle with pumpkin seed oil. Sprinkle with potato croutons
