Clean, wash and slice the tomatoes. Grate the gouda finely. Season sour cream with salt and pepper. Toast the slices of bread one after the other. Cover slices of bread with tomatoes, sausage and coleslaw.
Spread the sour cream evenly on top. Sprinkle with cheese and gratinate for about 10 minutes. In the meantime wash parsley, dab dry and chop finely. Serve the bread sprinkled with parsley. Sweet mustard tastes good with it.
