Ingredients

  • 250 g Flour
  • 180 g Butter or margarine
  • 1 egg (size M)
  • 7-10 Tbsp Salt
  • 200 g Flour
  • 2 Eggs
  • 1 TABLESPOON Oil
  • 1/2 TEASPOON Salt
  • 7-10 Tbsp grated nutmeg
  • 700 g leaf spinach
  • 7-10 Tbsp Salt
  • 200 g Tomatoes
  • 200 g Boiled beef sausage
  • 200 g Butter cheese
  • 4 Eggs
  • 125 g Whipped cream
  • 1/8 l Milk
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Lettuce and tomatoes

Directions

    Preparation. For the short pastry, knead flour, fat, egg and salt to a smooth dough. Cover and chill for about 30 minutes. In the meantime, sieve flour into a bowl for the spaetzle. Add eggs, oil, 200 ml water, salt and nutmeg and mix to a tough dough. Press the spaetzle dough through a spaetzle press into lightly boiling salt water and cook for about 3 minutes.

    Take out with a skimmer and drain well. Sort the spinach and wash thoroughly. Blanch briefly in boiling salt water. Drain, rinse cold and drain well. Scald tomatoes hot and peel the skin. Cut tomatoes into quarters, remove seeds and dice the flesh. Slice the sausages. Grate cheese. Roll out 2/3 of the dough to a circle (26 cm Ø) and place it on the bottom of a springform pan (26 cm Ø). Form the rest of the dough into a roll and press it to the edge of the mould as a rim of about 5 cm. Prick the base several times with a fork.

    Slice the sausages. Grate cheese. Roll out 2/3 of the dough to a circle (26 cm Ø) and place it on the bottom of a springform pan (26 cm Ø). Form the rest of the dough into a roll and press it to the edge of the mould as a rim of about 5 cm. Prick the base several times with a fork. Spread the spaetzle on the pastry base, place sausage slices on top and finish with spinach and tomato cubes. Sprinkle with cheese. Whisk eggs, cream and milk. Season with salt and nutmeg. Pour onto the tart and bake in the preheated oven (electric: 175 °C/ gas: level 3) for 50-60 minutes. Cut into pieces and serve with salad and diced tomatoes as desired

Pour onto the tart and bake in the preheated oven (electric: 175 °C/ gas: level 3) for 50-60 minutes. Cut into pieces and serve with salad and diced tomatoes as desired
