Ingredients

  • 1.2 kg Roast beef
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g clarified butter
  • 1 Onion
  • 2 Basil pots
  • 1 pot of marjoram
  • 1/2 bunch flat leaf parsley
  • 1 Pot of thyme
  • 2 TABLESPOONS Breadcrumbs
  • 6 Eggs
  • 2 Garlic cloves
  • 1 TEASPOON spicy mustard
  • 3 TABLESPOONS Lime juice
  • 1/4 l Oil
  • 7-10 Tbsp Insalata di foglie ed erbe aromatiche

    Wash roast beef. Remove tendons and degrease meat. Rub with salt and pepper and place on the fat pan of the oven. Pour hot clarified butter over it. Bake in the preheated oven (electric: 225 ° C/ gas: level 4) for 40 minutes.

    For the crust, peel and chop the onion. Wash the herbs and chop finely as well. Mix the prepared ingredients and breadcrumbs. Press on the roast beef 1/4 hour before the end of the frying time. For the sauce, boil eggs for ten minutes.

    Then mash the egg yolk. Peel the garlic and press it through a garlic press. Cream egg yolk, garlic, mustard and lime juice. Gradually fold in the oil. Season to taste with salt and pepper.

    Remove the roast beef from the oven, place it on a plate, cover with aluminium foil and let it rest for at least ten minutes. Cut open. Garnish plate with slices of lime and plenty of herbs. Serve with extra sauce.
