Pour the celery and carrot salad into a sieve and drain well. Cut gherkins into fine strips. Cut the sausage into fine strips. Wash the herbs, dab dry and chop finely or cut into fine rolls. Mix salad cream, yoghurt, cucumber water and herbs.
Season to taste with salt, pepper and sugar. Stir celery, carrot salad, cucumber and meat sausage into the yoghurt salad cream. Leave to stand for about 1 hour. Arrange the salad in small bowls and serve garnished with slices of egg, cucumber, chives and parsley. Serve with Grissini
