Cheese sandwich with grated carrot (diabetics)

Ingredients

Servings: 1
  • 2 discs Toast bread (50 g; e.g. wholemeal)
  • 50 g cleaned carrot
  • 1 tablespoon (10 g) Walnut kernels
  • 25 g Sour cream or sour cream
  • 1 TEASPOON Lemon juice
  • 1 Splash of liquid sweetener
  • 50 g low fat soft cheese with green pepper
  • several sheets cleaned lamb's lettuce

Directions

    Toast the toast bread in a toaster until golden yellow, let it cool down. Coarsely grate the carrot. Chop the nuts and mix with the carrots. Mix sour cream, lemon juice and sweetener. Cut cheese into slices.

    Spread a slice of toast with some sour cream. Spread lettuce, cheese and grated carrots on top. Add the rest of the cream. Cover with the second slice of toast
