Ingredients

Servings: 6
  • 1 Onion
  • 2 Garlic cloves
  • 200 g cherry tomatoes
  • 100 ml Olive oil
  • 1 TEASPOON Sugar
  • 10 Stem/s Basil
  • 1 TABLESPOON Harissa
  • 2 TEASPOONS Balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Peel and finely dice the onion and garlic. Wash and chop the tomatoes. Heat 1 tablespoon of oil in a frying pan and fry the onion and garlic. Add the tomatoes and simmer for about 5 minutes. Stir in sugar, remove from heat and let it cool down for about 30 minutes.

    Wash basil, shake dry and pluck leaves from the stalks. Finely puree the tomato sauce, remaining oil, basil, harissa and vinegar, season to taste with salt and pepper. Quantity results in approx. 300 ml or 6 portions.
