Ingredients

  • 1.5 kg thick salmon fillet
  • 3 TABLESPOONS Lime juice
  • 7-10 Tbsp Salt
  • 2 Limes
  • 1-2 young garlic bulbs
  • 1 sprig of laurel
  • 8 TABLESPOONS Olive oil
  • 600 g colourful peppers
  • 1 pickled cucumber
  • 30 g Pine nuts
  • 4 TABLESPOONS Chili sauce for chicken
  • 2 TABLESPOONS Vinegar
  • 7-10 Tbsp Pepper

Directions

    Wash the salmon, dab dry and cut into cubes of about 5 cm. Sprinkle with lime juice, salt a little. Wash the limes, cut into slightly thicker slices. Halve the garlic bulb. Put prepared ingredients and bay leaf alternately on skewers. Sprinkle with 6 tablespoons of olive oil, let it stand. Meanwhile, for the sauce, clean the paprika and cucumber, wash and cut into very fine cubes.

    Roast the pine nuts in a pan without fat until golden brown, take them out. Mix the prepared ingredients, chilli sauce, 2 tablespoons of olive oil and vinegar. Season to taste with salt and pepper. Cook skewers on the hot grill while turning for about 10 minutes. Season with pepper. Arrange skewers and sauce on plates. Tastes good with fresh bread and grilled vegetables
