Greek mince cakes with Mediterranean vegetables

Ingredients

  • 1 small carrot (60 g)
  • 2 (40 g each) Onions
  • 100 g Minced beef
  • 1 Egg yolk (size M)
  • 7-10 Tbsp Herbal salt
  • 1 tsp (5 g) Oil
  • 1 Garlic clove
  • 125 g Cucumber
  • 1/2 (125 g) red pepper
  • 1 tsp (5 g) extra virgin olive oil
  • 50 ml Vegetable broth (instant)
  • 1 Branch Thyme
  • 50 g Vegetable maize (canned)
  • 30 g Pecorino cheese (Feta)
  • 7-10 Tbsp some sage leaves
  • 1 Corn veal to garnish

Directions

    Peel the carrot and grate very finely. Peel 1 onion and chop very finely. Put the minced meat in a bowl and mix with egg yolk, herb salt, diced onion and grated carrot. Shape 2 flat cakes from the minced dough and fry them in hot oil until brown. In the meantime, peel and finely dice the onion and garlic. Peel the cucumber, cut it in half lengthwise and scrape out the seeds with a spoon. Cut the flesh into small pieces.

    Clean, wash and cut the pepper into small strips. Sauté onion in olive oil until translucent. Add cucumber pieces and paprika strips and braise for a short time while stirring. Deglaze with broth and simmer in the closed pan for 8-10 minutes. Season with thyme and stir in corn grains. Crumble cheese over it and garnish with sage leaves. Serve the mince with the vegetables
