Peel and chop the onion. Wash the rocket and basil, shake dry and pluck.
Wash the thyme, remove the leaves. Chop the pistachios. Cut the cheese into 4 slices and place them on a baking tray lined with baking paper. Sprinkle with honey. Sprinkle with pistachios and thyme. Cut the bread roll lengthwise into thin slices.
Put it on the tray. Sprinkle with 1-2 tablespoons of oil.
Bake in a hot oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for 6-8 minutes. Mix vinegar, salt, pepper and 1 pinch of sugar, fold in 2 tablespoons of oil. Mix with onion, rocket and basil.
Dress everything.
