Crumble the cheese for the filling. Coarsely chop the figs. Wash thyme, shake dry and remove leaves. Chop walnut kernels. Mix with cheese, figs, thyme and honey.
Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Line two baking trays with baking paper. Melt butter. Roll out dough. Brush each sheet of dough with butter one after the other and cut into 3 strips (approx. 10 cm each).
Place approx. 1 tbsp. of filling in the middle, one after the other, about 5 cm from the beginning of the strip. Place dough wedges over the filling. Wrap the strip further to form a triangular pocket. Place on the trays.
Bake in a hot oven for 10-12 minutes until golden brown. Remove. Taste hot and cold.
